What I Eat in a Day: Vegan & Healthy

Hey guys! Sorry that it has been so long🙈 I am back. Promise. I wanted to share a what I eat in a day for you all, so let’s get started!

So for breakfast I had oats with strawberries and almond milk! This is my all time favorite comfort food breakfast. I love oats and fruits mixed. It keeps me full, but I don’t feel gross. 

For lunch, I had my version of a Nicaraguan salad. I used romaine, cucumber, carrots, onion, tomato, beets, and garlic. For dressing I used oil & vinegar! So freaking yummy. 

Dinner was a sweet potato, big salad, and a bunch of green beans. I also had a couple of vegan chicken nuggets from Boca. Literally my favorite vegan junk food ever. So good!
