Cracker Barrel Inspired Vegan Stovetop Cinnamon + Spice Apples

Hey angels! Today I wanted to share a super yummy recipe. It is perfect as a side for a holiday breakfast, or you can even make a single serving like I did! I had so much fun creating this recipe, so I hope that you guys will try it out!

INGREDIENTS (for single serving)

  • 2 tablespoons of Earth Balance vegan butter
  • 1 large apple
  • 1 teaspoon of lemon juice
  • 2 tablespoons of cinnamon
  • 1 tablespoon of pumpkin pie spice
  • 2 tablespoons of maple sugar(any sugar would work)
  • 1/2 teaspoon of nutmeg
  • 1/4 teaspoon of cardamom
  • 1 tablespoon of water

First things first! Heat your Earth Balance butter in a skillet and add your apples. Let them cook for about five minutes. Don’t forget to cut them into small, varying sizes! This is going to leave some of them al dente and some of them almost caramelized. So yummy.

After your apples have had a chance to start softening, add in the spices and lemon juice. I also added in my water about this time. Let it simmer all together for another 7-8 minutes.

Now, this is only for the single serving recipe! Obviously you could make loads of these little guys, but I just made one. I heated up a flour tortilla, and spread some of my apple concoction onto one half of my tortilla half. You could totally use vegan cream cheese to make some sort of sauce or side dip for this… I have just never really liked cream cheese, vegan or not!

Let your tortilla get a little crispy just so that it will hold the shape! Maybe about 2-3 minutes on each side at a low heat.

And voilà! How delicious does this look? I added some ginger snap pieces because I actually found an accidentally vegan brand! I placed some small fresh apple slices for a pop, and sprinkled a bunch of cinnamon on top of everything.

I actually had mine for breakfast with a cup of tea. I am so obsessed with these apples, and I hope you will be too!
